Homeade stock

Just wondering how long does the stock stay good far in the refrigerator? What are the pros and cons of maybe freezing it? Any help will be appreciated.

I freeze mine all the time. I usually make stock once or twice a year and make way more than I can use at that time.

I always make a lot of stock and freeze it. Can't really think of any cons.

Freeze it in measured amounts. I buy the disposable Tupperware in 24 or 32oz sizes for portioning. You can also freeze it in icecube trays if you want it in smaller amounts.

It'll be bad within a week in the fridge.

I do this. several 2 quart containers....The Thai takeout we get comes in 2 quart containers so I re-use those.

Too cheap to buy Tupperware. Of course now my wife freaks over plastic containers so now we've started buying Glass Jars to put leftovers in.

I have a set of glass pop-a-lock containers that I love. I don't love plastic Tupperware.

I always save my Asian plastic to go containers as they make a perfect vessel to freeze stock in.

Another thing you can do is to pour your stock into ice cube trays, then after they freeze, transfer them into a large ziplock freezer bag, that way you have any amount you're going to need for any given recipe.

I freeze it all the time in plastic containers. I put plastic wrap over the top of the stock so there's no air. Keeps for a long time that way.

Roast your bones with your mirepoix veggies for about an hour then into a pot and cover with cool water. Doing this will get more of the marrow to eject from the bones, gets a nice color and flavor from the flesh remaining on the bones.
