Has anybody here tried soft-shell crawfish? Thinking of buying some.

I know Louisiana is the only place in the world that produces them. Any thoughts?

Had them on a dish at Louisiana Lagniappe. I thought they were amazing, and I'd like to try them again but I haven't seen anyone else serve them or sell them.

Had them eons ago at Ralph and Kacoo's. Were okay.

There was an old restaurant in Jackson called Nicks that had them as an appetizer, with a cream sauce. Wonderful, seasonal item.

Hardly ever see them anywhere, but worth ordering.

They have them at Trapani's in BSL. He stuffs and fries them then serves with some sort of sauce.

The restauranteur buys them for $13/dozen, not sure what sort of prices you'd be looking at since I assume that's a bulk price.

SSCs are an awesome delicacy. Double batter and deep fry and top with hollandaise or pan fry and do them picatta.

Blake Hopkins off Old Jefferson has them, he sells to some of the local restaurants. He used to own The Crawfish Place

commanders had that crawfish gnocchi dish topped with one recently. dear lord it looked good.

Over the Black Drum with fried artichoke hearts topped with a lemon butter sauce... it's legit.
