Drive 16 miles east of LC to Iowa, LA and get some Rabideaux's. They make good stuff.

What route are you taking that makes that a 16 mile trip? Rabideaux's is a solid option though. I love their smoked pork sausage. Hackett's on HWY 14 just south of LC is also very good.

Cooked a killer smoked turkey, chicken and sausage gumbo yesterday at the tailgate. Gotta do a roux from scratch.

See Gris' sig for my thoughts on "gumbo weather". I have batches from July and August still in the freezer.

Use Rabideaux's regular smoked pork sausage. Good smoke flavor. I prefer it to andouille.

Made a gallon of chicken stock this week. Will probably cook a batch of gumbo the next cold front that comes through

I have a good bit in the freezer, but I'm almost out of the shrimp gumbo base as I call it. It's shrimp gumbo without the shrimp. I add the shrimp when I heat it up since the shrimp doesn't freeze well cooked in gumbo. I'm going to make shrimp gumbo again soon. Next month, I'll need to replinish the chicken and andouille.

Made a big ole pot of chicken and sausage gumbo for the game on Saturday.

I usually wait until the weather is colder, but with the rain and a slight breeze, I got the envie to make one. Turned the A/C lower to help.

It was good, and we're still macking on it.

I wish I wanted gumbo :( Working at Dempseys for over 2 years has made me rarely able to stomach gumbo. Too much of a good thing really does exist.
