Gumbo recipe

Could someone please post a good gumbo recipe?

here's a simple one:

fill gumbo pot halfway with water. add salt and cayenne to water. boil and add roux and sausage. 30 min. later add onions. 30 minutes later add seasoned hen/chicken. boil till tender. now, most are gonna give you some gourmet shite. but, take it from a coonass, you will be going through alot of trouble for nothing.

also, bake you some sweet potatoes and serve them in your bowl with the gumbo when you are done.

Meh. I don't know if I ever heard anyone say "I garontee", but his accent, while completely fake, was pretty accurate for old school cajuns of his age.

Of course they spoke french. But when they spoke english, they sounded a lot like him.

Granted, that dude was from Tangipahoa and was faking it... but he sounds a lot like my old uncles and great uncles and the like. (Except for the garontee thing.. I don't know where that came from.)

Edit: shite, my dad was from Flat Town and he didn't speak english really until the forced him in school at like 8 years old.

I didn't tell you how to cook.

My dad was okay, but the women did a much better job. Some from there, some from Church Point, Plaisance, etc.
