make a roux 1/2 cup each of oil and flour
get it good and brown, add onion celery and bell pepper
let cook, add garlic and bay leaf
add chicken stock, smoked sausage, chicken thighs
let simmer for a while
check for salt/pepper/red pepper
serve over rice or a baked sweet potato
couldn't be easier
if you need to cheat use blue runner gumbo base

No garlic/garlic powder in gumbo, IMO

plenty of ways to cheat
roux in a jar, rotisserie chicken, starter in a can
I just like making the roux so I make it
if we are being honest I doubt anyone would ever tell the difference if it's just chicken and sausage gumbo
