Found a thread about guidry's mix but was unable to find something about the proportions.

Does someone know the approximate proportions of the yellow onions, bell pepper, garlic, parsley, celery, and green onions?

I know it is like 5 times the price if you buy it rather than cut all of it up yourself.

Appreciate the help

Couldn't you look at a tub of it in the store and get pretty close? By the time you put it in a pot and cook I don't think you will be able to tell if your bell pepper or celery ratio to onions is slightly off.

I don't know Guidry, but as a general rule, I'll tell you what I do.

3 medium yellow onions
3 ribs of celery (just the green part)
3 cloves garlic...I like it.
1 green bell pepper

So. 3,3,3,1.

Go to Capital City Produce off of O'Neal and I 12. Go to the will call on the side of the building. You can buy onions, celery, bell pepper, etc cut fresh and relatively cheap. Most come in 5 lb bags. If I cook a big gravy or jambalaya for a tailgate or party or whatever, it's my go to spot. Use cash or check. There is no card machine. Your welcome.

Guidrys ain't worth a shite....... I don't find it browns like a fresh cut onion. It also has garlic in it which gets bitter if you let it brown.

I cut my own, its not that hard.
