Venison is great in any lamb recipes which means most Greek recipes. Great on flat bread with tzkiki sauce. Also good on nacho supreme, meatloaf, shepherds pie.

We use it for everything except burgers at our house, although I might get some ground with bacon this year and try it. I shoot 4 or 5 a year and that's all we eat.
The other night I asked my kids (9 & 11) if the roast tasted gamey and one replied "I don't even know what gamey tastes like"

meatball stew
mix venison with ground bacon ends , use an egg and panko as the binder... brown then cook slow & low

some of the best deer jerkey I've ever eaten was done AFTER the meat was ground up. try it.

yes--venison makes a good swap for lamb, but it's so much leaner that you may need additional oil/fat to get an equivalent texture.

Per pound of ground venison I mix in 1/3 - 1/2 lb. of either 80/20 ground beef or ground pork and make anything I would make with pure ground beef.

Aside from all the great stuff everyone has already mentioned, an idea for a thoughtless meal that we do often on nights that we "don't want to took". Mix it with Uncle Ben's Original Recipe Wild Rice. We normally cook onions/bells/garlic for a little while then brown the ground venison along with some smoked sausage or tasso, then add the rice and cook per the box instructions. We also add jalapenos, edamame, and sometimes broccoli to it as well. Tip: add only half of the seasoning pack as it's loaded with sodium and it just doesn't need that much salt.
