FWIW, Today Is National Gumbo Day

So I'm starting @ 20 quarts of chicken, sausage, and oyster gumbo (with a duck or two thrown in).

To me, national gumbo day is the first saturday I wake up in the fall and it's in the 40s.

I made some chicken and andouille sausage gumbo yesterday. Gonna eat some tonight.

Sorry, bud! Cut the fire before service, dump in the the oysters, stir, count to 60 and you should be ready to plate. Don't over cook them!
