Fried Alligator

I want to fry some gator this weekend for the game and have never did this before, what is the best way to marinate and prepare this?

Coat in Red Dot hot sauce and slap ya mamma. Let it sit in that for a couple hours. I like to dust in a combination of half lemon fish fry and half well-seasoned flour. Do not overfry, or it will be rubbery as all get out.

What kind of alligator meat did you buy? Did you buy it in a 1lb pack at a grocery/seafood market?

If so you shouldn't have to do anything to it. You can dip in your egg wash and fry it like that. I like to cut it in small strips or pieces and fry it up like that. Regular egg wash then seasoned flour. No need to marinate alligator if it is good quality stuff. The stuff you buy in the 1lb packs is usally tail meat and tenderized and trimmed already.

I knew i guy with a couple tags and had given me some meat, I thought i read a while back its go so soak in butter milk but maybe not

We just soak the meat in hot sauce then coat it with flour seasoned with tony's. Which is the same way we fry chicken.

Oh ok that does make a difference. Like the other poster said, make sure you trim all the fat off of the meat and you are probably going to want to run it through a tenderizer or pound the meat with a meat tenderizer hammer so it isn't tough. Alligator can be tough if not tenderized somehow.

And soaking it in buttermilk/milk is supposed to get some of the wild taste out of the meat. It wouldn't hurt to do it.
