Marinate a 2 inch steak in 2 T dark soy sauce and 4 T molasses for 10 minutes per side.Heat black iron skillet, sprinkle steak with toasted sesame seeds, and cook about 45 seconds to 1 minute per side for rare to med rare.

Do I need to grease the skillet?

throw down a little bit of olive oil. put pepper and your favorite herbs on the steak. Sear it for 30 seconds on each side.

Enjoy.

(less is more in this case)

I don't know why people think they have to marinate tuna steaks. Don't do this, unless you're a cook at Applebees and have a desire to ruin the steak by cooking it all the way through.

Read the recipe...better yet, try it.10 miuntes soak time does nothing but coat the sides of the steak. The cooked part has a nice, seasoned flavor...the middle 2/3's remains rare.

The salt in the marinade will draw moisture out and the acidic nature will attack the meat on a molecular level and make it less fresh and less tender.

.. Just trying to help a brotha out.

Salt, Pepper, and fresh thyme. Add a little EVOO to an iron skillet and sear both sides for about a minute. Finish with a little lemon squeeze and that stuff is gooood.
