Ran across this article. Haven't had one of these in a while. Really miss the original Freeman & Harris Cafe.

That's an interesting enough article, I suppose. However, it gives absolutely no insight as to what constitutes "Shreveport style" stuffed shrimp.

What is it?

thanks for the post. I'll definitely will check this out next time I'm up there. when I was growing Dudley & Gerald's used to have some bomb arse stuffed shrimp. as did TS Station.

you stuff a butterflied shrimp with a mixture of crab meat, onions, parsley and seasoning. use breadcrumbs or rice as binder. then you batter and fry it.

Thanks R2R for the help. Also, the remoulade sauce is different from the classic New Orleans style. Unfortunately, I am unable to find a recipe online to explain the variance. The jarred version sold locally by Brother Chapman under the "Brother's" brand is supposed to be the same. Sorry I couldn't provide more insight. Just nostalgic for a local staple.

Bump- Just saw on Facebook that Orlando Chapman, son of Willie Chapman and the owner of Brother's Seafood (where you can find these shrimp) died today.

I didn't know him or his food, just thought it was worth mentioning since we had just talked about these stuffed shrimp.
