so i'm taking the reigns from my dad this year and doing our Easter crawfish boil. I have tons of experience eating the things, but little to no knowledge of boiling them.

Tips/ingredients/recipes gladly accepted

you will leave being very confused after hearing everyone comment!!

1 bag of powder mix
1 bottle of liquid

cook time... do potatoes, onions, garlic first

then when you drop the crawfish, i go about two minutes when it comes back to a boil (have cajun rocket pot though) then cut it off and dump veggies and ice and let them soak for at least 20 minutes

If you're doing this for a family function, you'll have more help than you need.

Depends on ur spice need. 1 tub of Zats pro boil or regular Zats crab boil. 1 of the little bottles of Zats liquid boil(it will turn it up a notch if added). Add ur potatoes, celery, onion, lemons(grab the big bottle of lemon juice instead). Bring all to a boil for a bout 15 minutes. Drop ur crawfish, bring back to a boil for 5 minutes or so. Cut the heat. Give it a stir. Let them soak for 30 min. Test them every 15 minutes. Now some people like to let them soak longer it all depends on ur taste.

If ur doing more than one sack do not put ice in to cool em off. Use a hose on the outside of the pot.

pretty much spot on

my only difference - I turn the fire off once I notice lots of tiny bubbles on the surface of water and steam just starting to emerge from pot. Then add 12 frozen ears of corn and hose side of pot for a few minutes to cool down.

I do not let the crawfish begin to boil, I prefer to soak for 35-45 minutes

to the OP, best of luck and don't listen to your drunk BIL who thinks he knows everything

These threads always help me realize how lucky I am to have been taught how to boil by some of the Irish Channel's finest.

All I do is fire up the burner and I have 10 coonasses come out of nowhere to tell me what I'm doing wrong.

That's when you say, "Great, go ahead and show me how it's done hot shot"

Sit down and drink beer

By the way, once you show me how to boil, I really suck at cleaning up after so show me that too.

I don't ice, I just cut if off once it come back to a boil.

MY biggest piece of advice though is to not be afraid of seasoning. Depending on how big your pot is you may need more.

MY method (100 qt pot)- 2 jars Zatarans, 1 bottle liquid. I put the potatoes in when i turn on the heat. I let it come up to a roaring boil. put everything else in. When i start to see bubbles i cut is and let them sit 30 minutes.

I don't ice, and i have never had a problem with over cooking. but I also don't wait for them to come back up like a roaring boil either so maybe thats it.

The universal sound of a roaring burner does it every time
I love these threads for the pure comedy

That's about what I do, but cut the heat off immrdiately when it comes to a boil. Don't like the bottled liquid boil, too much chemical taste. Dumping the ice in will shock them into not overcooking and leave them easy to peel.

Good luck and Bon appetit.

Just my 2 cents. Be careful if crawfish are small. If they are small to med. just barely bring them to boil then shut off. U don't want mushy crawfish.
