Felt like beef meatballs, Italian sausage meatballs and a big pot of red gravy

Got 3 1/2 dozen beef meatballs and 2 1/2 dozen Italian sausage meatballs in a large pot of homemade red gravy that is testing the limits on my 16 qt. pot this morning.

Cooking this in bulk is the only way I do it so most of it goes in quart bags for the freezer for later use. But a bunch of it will be eaten over the weekend I would suspect.

Just need to get to the store and pick up a nice loaf of French bread and make some garlic/cheese/spinach bread to go with it and a nice tossed salad.

Just made meatballs for the first time. Turned out pretty good but slightly overcooked.

Hang around long enough and you'll see worse than that. Seems some on here just love to hit the "Downvote" button for the hell of it.

Have someone ask for a recipe, post your favorite and watch how many downvotes it will get.

No explanation for the downvote, no input as to what they'd do differently or find out of place in the recipe, just tossing out a downvote.

More like practice to being a troll and not a helpful member.

Well, someone finally admits to being a downvoter, hat's off for the honesty.

Here's more. I don't own a digital camera, have a flip phone, don't really know much about computers enough to upload/download/post pics.

I've been very generous with my recipes during my time here and have seen many of them get downvoted for whatever reason, so I tend to not post them now.

As for the cooking process, most know what it takes to make meatballs with a good rich red gravy.

One secret is when you are baking the meatballs, fill the baking sheet yup with just enough water to coat the bottom of the pan. Your meatballs will be moist, and then finish in the gravy

one step further
use a muffin tin instead of a sheet pan, put a splash of water in each cup then the meatball. Same effect but better

So I did a low class version of this last week.

Browned some italian sausage in a dutch oven and then removed.

Added some onions and caramalized

Added a jar of store bought roasted garlic spaghetti sauce. (yeah, come at me bro)

Added the sausage back to the pot and continued letting the onions cook down into the sauce until almost gone

Served on some po boy bread with a couple slices of melted provolone.

Was a great and easy weeknight meal.
