I don't think you could pull it off in most American cities, because people are too used to Tex-Mex here.
A guy in N.O. tried to make a go at one. But he was too much of a Nazi douchebag, and the stuff he was putting out was really not all that impressive for what he was trying to charge.
I'd love to see someone else make another legitimate attempt at one.

Cantina Laredo in Shreveport is upscale and pretty damn good. Seems like everyone loves mexican food and the restaurant selection is so crappy that we settle for places like Superior, Carretas ETC...
La Carreta is Mexican-owned, servce good food, and has a few totally authentic dishes from the hometown of the owner.
Superior is a margarita bar that happens to sell substandard Tex-Mex. Those two shouldn't even be mentioned in the same sentence.

I used to work at Olive Garden in BR when it first opened up and I called it the Olive Complected Garden

I usually eat my Tex-Mex at home or when I travel to Houston. None of the places in BR or NO have anything remotely approaching authentic spice levels. The restaurants are afraid of offending gringo palates, this makes the food very booooooooooring.
The spiciest restaurant in BR is not Tex-Mex, its the Bay Leaf Indian restaurant.

When it comes to Taquerias and Tex-Mex restaurants, I don't equate spicy with good, but that's just me.

You don't go to a Mexican restaurant for ribs.

When my in-laws lived in Houston in the '80 they introduced me to really great Tex-Mex. There were several restaurants they were regulars at and a vast price range. The common thread amongst them was the spice range of the dishes comprising each meal. Some dishes were bland, some medium and some very spicy. The contrast heightened the particular seasoning of that dish. When all the dishes have the same spice level you miss that feature of the cuisine.
Very few people here, not even a lot in Texas, have been introduced to Tex-Mex properly. Most think of it as cheese, chilis, ground meat and tortillas. La Tanqueria on Seigen is my favorite for now, but I'm hoping the influx of Hispanics will open up new opportunities in BR.

I didn't like the food there.
Sarita's on Bennington is owned by relatives of theirs, the owner (El Salvadoran) used to be an owner of Magey. Sarita's isn't great, but at least okay as far as Mexican buffets go.
I do like the bakery next to el Magey though, owned by the same family that owns the buffet. They make the best Tres Leches Cake in all of Baton Rouge, and even their non-Latin baked goods (pineapple upside cake) are awesome.

IMHO...I would not call La Tanqueria "Tex-Mex".
I found that to be Mex-Mex...and I really am a Tex-Mex fan.
