F&D Board Chopped

I have the following in my kitchen:

10 minute white rice
Red and white wine
Conecuh hickory smoked sausage
Four onions
Bell pepper
Tomatoes
Garlic
Mushrooms
Fresh spinach
A gallon of chicken stock
Olive oil
Thyme
Sage
Rosemary

The wife's text message read: No gumbo.

Any ideas what I could make? Obviously not all of the ingredients need to be used.

Well...I'd hate to list every little thing I have.

I do have curry.

And I do have milk.

And I do have vanilla yogurt. And eggs. And coffee. And oatmeal.

Saute all above vegetables in olive oil, add seasonings and a hint of chilli powder and curry. reduce with a little red wine.

Cook rice with chicken broth, and grill or saute sausage.

Serve veggies on rice with sausage on the side.

Sauté onion, pepper, garlic, and shrooms. Add cooked sausage. Add a little chicken stock and milk. Add curry powder red pepper to you preference. Simmer for a little bit. Serve over rice.

That's what I'd do, but I'm pretty easy to please.

Any chicken and/or beans?

Sautee an onion or 2, throw in some garlic and mushroom, add broth, herbs and chicken and/or beans and a little sausage. Add rice and spinach 10-15 minutes before serving. Chicken and rice soup.

you could probably throw in whatever other veggies you have as well.

I would make a sausage soup:

Brown the sausage in a stock pot with olive oil, garlic, onion and white wine. Stir in about 14 ounces of the chicken broth and chopped tomatoes (season with salt and pepper).

Simmer covered for about 15 minutes.

In a separate pan.. chop the mushrooms and bell pepper and saute with thyme, curry powder, olive oil and white wine. Add to stock pot. Cover and simmer another 15 minutes.

Remove from heat and add spinach (about 2 cups, torn). Cover and allow the spinach leaves to cook.

Ready to eat.

I may do this. Mainly because it looks to be the easiest.

yeah that sounds pretty solid. only things I would add would be some cumin and a squeeze of lemon.

Dirty rice stuffed Bell peppers

cook the rice in chicken stock

chop and fry sausage in olive oil
add (Onion, tomatoes, spinach, mushrooms) salt, pepper, red pepper
saute
add (garlic and thyme)
deglaze with white wine

add a little chicken stock if not wet enough.

Stir in cooked rice. Stuff into prepared bell peppers. Put into casserole dish with 1/2 cup each white wine and chicken stock in the bottom.

add Bread crumb topping (fresh or dry bread crumbs, melted butter, garlic, thyme)

Bake 350 25-30 min

Bell peppers prep
Cut top off of bell pepper, clean, blanch in salted water for 1-2 min, ice bath
