Egg muffin recipes?

Recently someone mentioned egg muffins in a thread on quick and easy breakfast options. I had never heard of these but after doing a little research I have found they are apparently a really big thing these days. There are tons of recipes out there but I figured I would see if anyone here had any tried and true recipes that they enjoy.

Keep it simple.

Butter a muffin pan.

Put whipped eggs in pan, filling each a little more than halfway.

Then a pinch of greens.

Then a pinch of feta, or cheese of your choice.

Then maybe some leftover meat, or specially cooked breakfast meats.

I think they come out better baked at a lower temp, 285 for 10-15min, careful not to overcook.

I had some at a brunch over the weekend.

The one with ham, cheddar, green onion and garlic was good.

The spinach and feta was good too.

I make baked eggs all the time...but rather than beating/scrambling the eggs, I just break the egg into a muffin cup (if making many) or ramekin (for just one or two), season, and bake. This way, you get a runny, dipping yolk and a semi-firm white.
--line cups w/thin ham, garnish w/gruyere & black pepper
--put baby spinach in bottom of cup, garnish w/a grating of nutmeg & some feta
--cut cherry tomatoes in half or quarters, add on top of the egg, along with some herbes de provence & goat cheese

Basically, I garnish with whatever's lingering in the fridge cheese drawer and/or crisper. A tblsp of heavy cream or half n half in the ramekin is a good thing as well.

Made a batch last night. Browned lean ground beef with onion and taco seasoning. Added this to eggs, sharp cheddar, red and yellow bell pepper and black olives. Turned out great.

Yeah, sour cream and salsa. Can not believe how good they turned out. I figured they would still and fall about but they have the firmness and consistency of a regular muffin.
