Not in America. We process our eggs differently; has to do with the Europeans leaving the outer coating on the shell whereas we file it down. Very different and can lead to salmonella over here. You can obviously leave eggs at room temp for a couple hours if you're cooking with them but I'd never store them at room temp in this country.

I prefer the house at 70 during the day and 68 at night. Lucy is two degree colder...68 during the day and 66 at night.
As for butter, it doesn't take up any space in the fridge. Why would you put it out on the counter?

Processing eggs? Filing egg shells? I've never heard of such.

I'm referring to home-raised eggs that I gather. I can leave them out on the counter for two weeks and they're just fine.

Well my point was typically we live in climate controlled residences. Why would the season matter? My house stays at 68-70 degrees year round.

I remember gettin' my milk right out of the cow teety and churnin' our own butter on the porch. we didn't have time to worry about EPA, NCAA, AARP, the NFL or the microbiology.

I make my own butter all the time. Buy a quart of heavy cream, dump it into my stand mixer and turn the whisk on for about fifteen minutes. Then wrap in cheesecloth and wring out the buttermilk. Yields two cups butter and two cups buttermilk.

I make compound butters out of it.

I churned on the farm as a kid. That's some frikkin work.

Yes in a glass holder, covered. But we keep it in the bread cabinet, doesn't look so good just sitting out....looks like it was not put up

When we are at work in the summer, my AC is turned up till we get home. In the winter, the house is generally cooler.

Fair enough. I can say not only me but my parents, grandparents, siblings and all of my in laws as well do it. Now to be sure we use butter a lot. It's not like a stick will sit for days on end without being used. We buy the large pack at SAMs or Costco which is I think 4 lbs or so. Stays in freezer and one box comes out at a time. One stick always on counter, three sticks in icebox.

Okay, cool, you have no idea what you're talking about.

I don't leave butter on the counter as that wasn't how I was raised. I never really gave it much thought.
