For those who are asking, yes she has celiac. I didn't see the need to go into too much detail, but it's very real for her. It can be hard to deal with since many cusines served in LA are made with flour or other ingredients that contain gluten. If it was up to her, she would not be spending the extra money to buy gluten free food or being picky about where we eat. It's not a cool "trendy" thing to live with.
For those who gave suggestions, thank you. I will try them all. Except for panko. Great to cook with, but hard to deep fry with. It clumps up and doesn't distribute evenly over the food.

I used rice flour to fry a whole flounder a few times as per a recipe from Savannah, I believe. Worked great. Very crispy result.

Have you tried an oil-less fryer?
They're very easy to use, I use a small amount of olive oil, then a dry rub of your choice, good luck

My wife just got diagnosed with this as well and it's been crazy trying to adjust our meals.
