I've always loved the ribeye. It has never let me down. To me, ribeye is the king of meat cut.

Prime ribeye all day errday or if I'm trying to pretend to be healthy I'll get YFT steak.

skirt or flank. Cooks quickly and comes out very well if you do it right

This. I also love doing boneless/skinless chicken thighs that I've marinated. Lamb is also awesome on the grill.

since we're on this topic, give me a good quick ribeye recipe for more than just salt and pepper. i've always been a cast iron, pepper, and kosher salt guy, but got a new grill and feel like i need to change it up once. thanks

Season with salt, pepper, olive oil.

Finish it by rubbing a cut clove of garlic, butter. And beat it with some rosemary. As the steak rest, Collect the juice and add a few drops of lemon and a little cut of butter. Pour it over the steak before eating.

this is the correct answer.

ribeye goes on the open fire

filet goes in the iron skillet.

You meant to say, ribeye sits in fridge until nicely green, then it hits the fire.

Quick question from a rookie steak cook. Why is the skillet better for filet. I'm a filet guy and wondering why the difference in cooking styles. Is it one of those things where cooking a filet on a grill is never acceptable or just optimal to use the skillet

Most steaks do better in a skillet, especially for home cooks that don't cook steak often. The dry heat of the grill usually tricks people into leaving them on too long. As for the filet specifically. It's the least flavorful cut so it benefits from the constant contact of heat to give it a great crust.

Well, you said 'meat' not 'steaks'. I don't grill steaks anymore. I prefer chicken or burgers. When I want a good NY strip steak I do it stove top.
