Planning on making a crawfish ravioli with my leftover crawfish. I'm up in the air about what type of filling should go in there. I was going to use the John Folse Crawfish stuffed pasta shells recipe, But was debating on whether or not to add ricotta cheese to make it creamier. Any recommendations?

Just make sure you wash your hands before you get back in the kitchen.

I would cut the breadcrumbs in half and add ricotta and some green onions. Stuffed shells need ricotta.

I wouldn't use ricotta (though it would work to bind the filling). I'd probably use a little sautéed, grated zucchini or other squash. Dairy like ricotta can dull flavors....let the crawfish shine against zucchini or another more
vegetal/contrasting binder.
