CostCo whole loin (NY Strip)

USDA Prime. I cut this a couple of weeks ago. I've grilled steaks, and pan seared then to the oven... pan sauce.

Any other suggestions/recipes?

Those don't look like USDA prime. Not saying they aren't. They just don't look like high quality Prime beef. Not much marbling in them at all.

I see that's the boards newest trend.... "sure doesn't look like prime to me"

I've seen this same accusation several times over past few weeks. Why would a store falsely advertise prime?

And to answer OP, I'd sous vide or reverse sear dat

Further, why would someone come here and say Prime if it wasn't? It's like the guys on the OB that want to argue over what a deer will measure when the poster has actually had it scored and states as much.

Looks like prime marbling to me,

The difference between prime and choice marbling is only obvious to a trained eye. Are you a meat inspector?

Nice looking steak. My only recommendation would be to trim the supraspinous ligament off aka the backstrap.

Yes, I trimmed before seasoning. BTW, I just splashed some Allegro, sea salt, and fresh ground pepper on them and hit a very hot green egg for a few minutes.

...not very creative, but if it ain't broke ...
