anybody know how to make a homemade corn tortilla? I have a shite load of corn at the moment, and I'm getting tired of eating roasted/grilled corn on the cob every damn day

the key is (and it's pretty tough your first few times) is getting the right ratio of masa to water. also, he doesn't have it in his post but I feel that lard or butter or some kind of fat is a necessity.

Not happened yet. Now communion host, that's another story.

Do you corn people eat fajitas with corn? I've never seen them served that way.

Yeah, get some masa harina...I'd imagine making them from whole corn takes commitment.

Two of our joints have nothing but Mexicans in there. Good luck getting service when soccer is on the tv. Anyway, the only things they serve on corn are enchiladas and tacos, but not all "tacos".

Corn has it's place. Places like tortillas and corn meal or as is.

The new thinking is that corn doesn't belong in tortillas, but it is normal if its in flavored water, ice cream, soda, coffee creamer, simple syrups, chocolate, tea, ketchup, mustard, yogurt, apple sauce, jelly, soups, etc, etc, ad nausium.

I'm sorry to say but your girlfriend is wrong. Either is fine for any meal in the day. Time of day is not what determines what is better, it's the actual entree that does.

For instance, some people enjoy barbacoa for breakfast which is amazing on fresh corn tortillas with a good salsa. Typically, the rule I go by is if rice or some type of sopita is involved you go corn. Otherwise flour is best. A contradiction to that is a good menudo which is perfect with flour.

I prefer the taste of fresh made flour tortillas anyways and will most of the time request that no matter what im eating.
