Cooking comp idea???

I have a cooking comp next week so this weekend I'm experimenting on some things. I need a "Cookers choice" Idea. The standard comp categories are:

Ribs
Chicken
Beans
Cookers choice.

Desserts and sweets typically don't do well here in judging after all the heavy BBQ foods. Any ideas here? Something lighter usually does well. Im open to hear it

Hard to beat the Mustard & Pickle Pie

the basic recipe is:
pie crust
2 cauliflowers diced
4 pickles quartered
4 tbsp butter
4 tsp mustard
1 oz grape jam

OK, more info needed. Preparing and cooking on site? If so, what appliances are available to use? How much time to prepare and present your entry?

If doing it at your home and just bringing it in for presentation, that would make it much easier and less stressful.

Cooker's Choice could include????

Etouffee'
Sauce Piquant'
Jambalaya
Seafood based fettuccini
Kebabs
Lasagna or other type casseroles
Gumbo------seafood, chicken/sausage/okra

This looks like a barbecue competition, so some things for your consideration…

Smoked queso
Boudin bites.
Pork belly burnt ends.
Suckling pig.
Wings with an Asian or pepper jelly finish.
