If they don't have it, get the tubes and tentacles (calamari). You can skip the whole slow cooking part and just sautee them with herbs, garlic, shallot, EVOO in a cast iron.

What was Captain Jones' plan for the part above the beak? Same thing? Braise and sear?

No idea. But it just sounds scary, so I'd throw it away Then again, I didn't eat any of it, so don't take my advice.

I downvoted you because I don't like your horse.
No disagreements though.

Didnt get a chance to look at the thread after I posted it but ill answer some of the questions.
It really wasnt at all. The biggest pain was going to the counter and realizing they didnt have what I wanted and I had to go to the aisle and avoid people while I looked for recipes on google. Besides time, it was very little work.
Not a lot of work and I think the octopus came out to be $7. With the veggies, the dish cost around $10. Was definitely enough to share between 2 for an app.
lol. How are people thinking this is a lot of work?
It was a pretty good purchase.
$8 or $9 per pound
Next time yes. I just discarded this time because I was just experimenting with the whole thing

Looks great but way too much work for that little of meat. And I doubt it was cheap

I'm gonna grab a couple this afternoon and get'em going Sunday. This is one time I wish I had an immersion circulator. But if Captain Jones didn't need one, neither do I. I'll bump this thread with pics.

The head is the best part. Where did it go?

I love to read about folks cooking more adventurous or unusual foods like this. Thanks for the post.
The octo I've had in restaurants has been good, and have wanted to cook it at home, but I never see it for sale here. Whole Foods is under construction, so maybe soon.
The recipes I've seen online are all over the place and inconsistent on approaches. I'm leaning to simmering for a while like you did, then grill over charcoal.
