Coffee recommendations

I just bought a French press and coffee grinder for the first time and am finally looking to make great coffee at home. I had been a k-cup drinker for the last couple of years before I really started looking for a better tasting product.
I'm looking for your favorite beans to grind at home and also any tips for using a french press/making a great cup of joe.

Do you have a favorite coffee shop (local, not a chain)? There's a good chance they roast their own beans and sell them. Buy from them and skip the grocery store coffee or God forbid Starbucks' over-roasted, burnt coffee. Make sure the coffee beans are freshly roasted.
French press tips:
•Bring the water to a light boil
•After pouring the water over the grounds, use a utensil to ensure full saturation (the coffee releases gasses so you want to make sure the grounds are not floating on top, thusly not steeping)
•Steep the coffee for 5-6 minutes then press and enjoy

It sounds like the freshness of the roast makes a lot more of a difference than the source of the beans themselves. Is this correct?

I wouldn't have thought to go there, but that actually makes sense. You can find a lot of unexpected treasures at Spec's.

Got to have a local roaster out there. Stuff is real good when it's fresh.
I like cafeciteaux in BR and Coast Roast on the coast in MS for local stuff (wife is from the bay).
Buy whole bean and a decent grinder.

They're both important. I have friends that won't buy beans that weren't roasted within 5 days but they also have access to multiple roasters. I would go explore the coffee roasters in the DFW area and try out a bunch of different varieties and roasts to see which ones you like then you'll know which regions coffees you prefer.

if you live in BR you cant get much fresher than community which is roasted in port allen. community dark roast is an excellent bean roasted locally and generally fresh on the shelves

If in BR area, Cafecitaux roasts some incredible stuff. Order one of their sampler packs.

I tried Cafeciteauxonce and wasn't impressed. I'll give it another run after I finish off the stuff I brought back from SF.
Don't even start with the 'Community is a good product' bullshite. It's what we're used to here in SOLA but there's much better local coffees out there.

Do you remember which variety you tried? Wasn't super impressed with their early stuff but I've been very pleased with almost everything they've put out recently. If you dig cold brew their rocket man blend is amazing
