Chili idea

It's getting to be that time of the year. Instead of using just tomato sauce in my chili I've started mixing beef stock/broth with tomato paste. The stock is too thin to mix with tomato sauce but perfect with the paste.
I prefer cayenne to jalapenos for the heat. I also make it with beans but in a small ratio to beef.
Any other ideas about chili?

I use small cubed sirloin instead of ground beef.

Try using some bacon along with the other meat(s).

+1 shredded sharp cheddar
Always make ours with ground venison and add a can/bottle of beer. Beef broth really kicks it up a notch too

I use ground meat, diced pork, dice sirloin with a bloody mary mix as my tomato base, and of course chili powder, cumin, onions ect...

Yes, I always cook my meat with one beer, gives good flavor and helps meat from sticking to the pot, unlike Jambalaya.

roasted red peppers and beer! Ancho and chipotle' chilis are also a nice addition

If you use ground meat have the butcher make it "chile grind" which is larger and stays together much better than regular ground beef. I find that is too much like spaghetti sauce.

chili suggestions==
1 use chipotle's (along with your other peppers)for extra flavor
2 use black beans(i find that they have a sweeter taste)
3 use a combination of tomato paste,cruched tomatoes and beef stock(never use tomato sauce--its too bitter)
4 mix in some ground pork or venison with your ground beef
5 always serve with grated sharp chedder and a dab of sour cream
