Gahhhhh I missed these posts!

Looks great, MD, and I LOVE the idea of using ground chicken.

Return of Heather?

Boy I could say several cute, but off color things that would upset Chicken and the admins. Since I know that, I'll just say Heather's return is most likely the better thing.

Ground or purchased?

I bought this at Kroger from the meat market, already ground. You can grind it yourself. We have a grinder on our Kitchenaid mixer, but using already ground chicken is so easy and that was the intent of this dish.

Honestly, this cooks quickly and I probably finished the dish in the time it would have taken me to grind chicken and then clean my grinder.

made this last night with ground turkey. Turned out really good, and my picky wife loved it.
Thanks MD!

I raise chickens and have a carnivore grinder, can’t wait to try this!

Or may try with some wild turkey we shot....

Looks great! I’m guessing ground turkey would work as well?

ETA: Oops missed Teddy’s post. Glad to hear it turned out well with turkey.

Local store did not have ground chicken, so I just pounded a few breast, egg wash, then into a mixture of 75% grated Parmesan cheese (cheap green jar) and 25% bread crumbs, then followed per your technique, came out great and will be in the repeat list

Thanks

Made this last night. Our roos were not ready so we bought chicken breasts and ground those. Used one goose egg...they big, and threw parmesan rind in sauce as someone suggested. Fantastic! Made the keto rotation...Thank You!

Been wanting to make this. I like the ground chicken idea better than using a breast.

I have screwed up chicken breast cooking for things like parm and piccata for forever. Never thinking of ground.

Looks great

We have been to Marigold several times and have a couple of pieces. What we actually collect is Shearwater, from Ocean Springs. Maybe have 30 pieces.
