Chicken fried rice recipe?

Wanted to ask this board if anyone has a good chicken/shrimp fried rice recipe. Want to try to make this for a family of 3. TIA and I always appreciate the tips I get from this board

Here is how I make fried rice. Easy recipe to add/subtract...
Cook rice, and then spread it on a sheet pan. Let it cool completely.
Take some leftover chicken, or cook chicken separately and dice it up.
Prior to next step, dice some shallot (or scallion), ginger, and garlic. You want a lot of this.
Beat 3 eggs or thereabouts (again, go up or done).
Get a wok screaming hot. Add in egg. Stir, let it fry up, pull out, egg, add more oil if neeeded. Add in ginger, shallot, garlic, rice. A dollop of butter helps. Keep pan hot and rice moving. You want it to crisp up but not necessarily brown (the soy gives you a lot of color).
Add in chicken and egg. Add in soy and other flavorings. Plate.

Crisp the rice first. That way when you add ingredients and moisture it doesn't get too soggy.

The Wall Street Journal has a recipe for "Fried-Chicken Fried Rice With Pickled Scallions and Ham" that I just copied and saved.
They say it is " insanely delicious (really)".
Pick up a three-piece box, get a thick slice or two of ham at the deli, and make it.

I always use leftover rice... in fact whenever we make a dinner that requires rice, we make about twice as much as we need so I can make fried rice later in the week.
I usually do it with tofu because my wife is vegetarian.
I don't really use a recipe... I just start with cooking the tofu (sub chicken here), then take it out of the wok, then stir fry onions and rice until onions are translucent... then clear a hole in the middle and scramble a couple eggs, then add seasonings that usually consist of garlic powder, black pepper, chili powder, and curry powder, then mix it all together and add tofu/veggies/soy sauce until it looks like fried rice.
