I'm trying to get back on the no carb thing so I'm interested.
How did you cook it?

How was the cauliflower consistency? I'm guessing it's not as big a deal because of all the ground meat.
I made a cauliflower jambalaya that tasted phenomenal but the consistency was garbage.

I pan fried the food processed cauliflower for about 5 minutes at med-high heat. Left a little extra liquid in the separately sautéed, slightly boiled ground meat, onions, and savoies mix. Then mixed the pre-pan fried minced cauliflower into the hot mixture; heat turned off. Stirred well and seasoned with uncle larrys.
Got some molasses bacon seasoned chicken thighs on the pit to accompany the dirty "rice".

I guess I need to try this cauliflower rice stuff
Do you all buy it pre packaged or make it yourself?

You can make it yourself, but I am lazy and like convenience, so I buy frozen cauliflower rice.

Cauliflower has 25 calories per cup vs. 218 for a cup of cooked brown rice. (And, if you're watching carbs, cauliflower has 5g per cup vs. 46g for a cup of brown rice.) Cauliflower rice is easy and fast to make. Plus, it's crazy-delicious

exactly
A whole head of cauliflower has 29g of carbs, 12g of which are fiber. If you're using net carbs, a whole head has 17g.

I tend to like the cauliflower stuff better than what it replaced.

We buy the prepackaged riced cauliflower. I am not a huge fan of it. The texture is just too different for me to actually use it as a rice substitute. My wife really likes it though. Instead of trying to make something kind of like rice, I typically substitute spinach for rice. It works well because I don't find myself comparing it to rice as much and disliking it.

Come on, man... Look at what a head of cauliflower offers versus a single cup of rice.
