Burger sliders for a party

Having a birthday party for my daughter this weekend and the wife wants to do sliders.

Any tips on how to make a bunch of these? I typically do the gallon ziplock bag trick. Put the meat in the bag, flatten it out, then cut into squares.

I'm thinking just throwing them together in little balls and doing smash burgers on the griddle would be the quickest.

yes it would be quicker. However check youtube for doing a big ole slab in the oven, just a suggestion

Easily make a boat-load of sliders for a large group or a hungry few. Serves: 32 burgers
Ingredients
3 pounds ground round
3 med-large yellow onions
1 Tablespoon butter
salt and pepper to taste
1 package of 32 prepared dinner rolls, still connected and in two layers of 16 rolls each
Desired condiments

Instructions
Grate onion and place in strainer over a bowl for 30 minutes.
Melt butter and brush over bottoms of 2 - 9" x 113" x 2" pans.
Mash onions into strainer to release the remaining liquid and spread evenly into each buttered pans, about ? cup per pan.
Crumble raw meat over onions to distribute evenly and mash over onions. Try to keep onions beneath the meat layer.
Bake at 350 degrees for 30 minutes.
Slice connected roll layers in half horizontally.
Remove meat from pans onto bottom half of roll layers.
Cut meat in half in pan for easier handling.
Sprinkle meat with salt and pepper as desired.
Top with cheese and the top half of roll layer.
Slice the roll rows and "columns" to divide into individual burgers.
Dress with desired condiments.

I've seen that but haven't tried it. Looks great to me. I guess if you wanted to do that on the grill, you could skip the onion part and put the slab cut into quarters, maybe, and grill them. Maybe a big basket?

Or, couldn't you put the baking sheet on the grill to get a little grilled flavor from smoke or something?

My wife does the baking thing for the kids sometimes and I am not a fan. Baked ground meat is not that good compared to grilled or even pan fried.

If you grilled, you could still mash the onions into the meat, right?

Just the color and texture are off putting to me. They come out kinda grey.

Yes, either that or just cook the meat with the onions on top

Maybe finishing the meat under a broiler could give you some crust on the beef

If you want that "seared" look that you don't get in the oven, you could do it on a griddle. My husband does them sometimes using our pancake griddle, by prepping the meat using a cookie sheet.

He lays a piece of wax paper or parchment paper on the cookie sheet, sprays it with Pam, then puts the ground beef on it and flattens it out. Then he transfers the huge rectangle of meat onto a griddle by flipping it over and peeling off the wax paper. He cooks it on one side, cuts it into flippable sizes with a spatula, and finishes cooking the meat. He cuts it into small squares right before he takes them off the griddle.

i saw someone make sliders using a whole pack of those Hawaiian rolls. slicing them down the middle, taking the top part off, putting the filling on top of the lower layer. putting the top layer back on and then cutting between the rolls. But, i'm not sure if that would work with burgers.

I've got to make about 60 of these so I'm looking for efficiency not a culinary master piece. I would like to figure out how to get some sort of crust on them though.

May try the broiler idea.

What about griddles on your grill? I'm with you on getting a crust. Broiler might work, but the griddle would taste better.

get a sheet pan and spread the ground meat out thinly in the pan...you can put a sheet of plastic wrap over the meat and roll thin with a beer bottle or something

take a pizza cutter and cut into the size squares you want

you can do several sheet pans like this

spread grated onion over the top

put under the broiler till crusty, pull and flip them, then crust the other side.
it will only take a minute or two each side

Go to YouTube look up Ballistic BBQ. Greg has a video up on his You Tube channel of how to make burger sliders like White Caste and Crystals. They are not all that complicated and our actually pretty damn good.

Your smash burger Idea sounds good also.
