Brought gumbo to share with Birmingham co-workers

Let's see what they say. It's chicken and sausage, with a dark roux. Small amount of okra added. And it's spicy.

And, for Gris Gris' sake, I even thinned it out a little.

One co-worker is dating a woman from NOLA, so he should be up to speed. Another is pretty well versed in Louisiana dishes. The other few are all new to gumbo.

I hate when folks call it soup. It's not soup....it's much bigger than soup.

Should have left that nasty okra out. You'll turn them off from gumbo. Good job!

This is why I don't give much credence to the opinions of folks from other states on gumbo and other Louisiana dishes. Same reason why you must be careful if you're going to eat at a "Cajun" restaurant in another state. Even if the chef is from Louisiana, s/he might have to change up our recipes to service local palates.

I made a dark roux, okra-less chicken & sausage gumbo for some friends from Oregon and Ohio. They loved it. What's not to love about gumbo? You act like it's some exotic mix of ingredients and the poor Gumps won't know what to do with it. Slop it over some rice, add some hot sauce if you want, and go to town.

I've lived in Alabama for many years, and this is exactly what my experience has been. I even competed in a gumbo cook-off in Huntsville and witnessed the most ridiculous excuses for gumbo you've ever seen.

Anyway, I got two thumbs up from everybody. The guy who dates a lady from NOLA wasn't here today. The participants were a kid from MSU who was raised in Hattiesburg, a buddy of mine who knows his food, and three ladies born and raised in Bama who have little to no experience with gumbo.

I have gumbo left to share, but ran out of rice.

Teaching Gumps good gumbo, one at a time.
