Boudin Tacos - WYEI?

Random lunch. Tried to recreate a chorizo taco with boudin.

What type of plate is that?

Cheese doesn't go on tacos.

I black iron skillet fried the boudin to make the flavor more intense and crisp up the rice.

It was good. Better than frying up patties and putting it on white bread, though that was plan A before I found the left over tortillas.

Should have used spicy mustard instead of sriracha. Don't know what I was thinking, outside of a more traditional taco.

Those tortillas make me sad. I don't know how you gringos eat store bought corn tortillas...they are worse than store bought flour tortillas.

Chop an onion and cut up a bunch of cilantro and mix in a bowl with a good squeeze of lime and a pinch of sea salt. Put on any taco to cut the richness. Great stuff even on a boudin do taco.
