Has anyone ever made a boudin pizza? I'm looking for more ideas for a sauce besides the typical red sauce.

Planning to add onion, garlic, bell pepper, and an egg on top. Any other ideas are welcomed for that too. Thanks!

You could get crazy and do a thick brown gravy as the sauce.

I love the boudin pizza at pastime in downtown.

I think Red Zeppelin makes one with boudin and andouille. They use a white sauce, if I remember right.

I like to dip things that are stuffed with boudin in pepper jelly. You could do a pepper jelly swirl as the base.

Bar bq sauce.

I made an omelette the other day with cheese and boudin and it was delicious. My wife even asked me to make her one.

Bbq sauce sounds great with the smoked boudin omelette.

Stuff the crust with boudin.

Gravy for the sauce.

top with bacon (or cracklins if you don't mind a few broken teeth) and green onions.

Oh man, boudin pizza w/ a pepper jelly sauce and pepperjack cheese... that sounds delicious! I'd throw some caramelized onion on top too and finish with some green onion when it's done cooking.

pizza artista in Lafayette has a really good boucherie pizza that has boudin and cracklins on it

I would use Pillsbury crescent roll dough, rolled out into a rectangular pan, with a base layer of boudin removed from the casing, pour over a scrambled egg mixture, then layer grilled bell peppers, and onions, then a layer of pepper jack cheese and bake at 350 til the eggs are set and the cheese is nice and bubbly, add finely crumbled cracklins or bacon on top and finish with a sprinkle of thinly sliced green onions. Spoon a little sour cream an/or spicy salsa, like Pace, individually if you want it.
