Boneless Pork Ribs - Recipe Suggestions Needed

Picked up some boneless pork ribs at the store yesterday on a whim, but I have no idea what I should make with them. What do y'all suggest? I don't have a smoker or a grill (proof of whimsical purchase), so I'll need something I can do on the stove or in the oven.

It may very well be Boston Butt cut into strips. You can cook them like regular ribs. My mother in law cooks them in the over and I eat the hell out of them.

I was thinking that may be the case.

Whatever the cut, could I make carnitas with them? Or maybe a gravy?

Cube them. Flour, salt, and pepper. Sear in cast iron.

Remove, drain. Add to pan onions, green chile, tomatillos, garlic. Cook down. Add some water and blend.* Add pork back in and allow to braise til tender. Slap in the middle of some tortillas.

*You can also buy a salsa verde pre made and just skip these steps.

Sounds really good. If I go with that, I think I'll make some cilantro lime rice and pico de gallo (I love that stuff).

AKA Country Style Ribs. I smoke them for a couple hours then glaze them with bbq sauce on the grill.

1 cup onions, finely diced
1 cup celery, finely diced

METHOD: Cut round steak into 3-inch square cubes. Season to taste using salt and cracked black pepper. Dust pieces generously in flour and set aside. In a heavy-bottom dutch oven, heat oil or shortening over medium-high heat. Sauté round steaks until brown on all sides. Add onions, celery, bell pepper, tomatoes, green onions and garlic. Sauté until vegetables are wilted, approximately 3 to 5 minutes. Add beef stock, bring to a low boil and reduce heat to simmer. Cover Dutch oven and allow grillades to cook slowly for approximately 45 minutes. Stir occasionally to keep seasonings from scorching. Once tender, add mushrooms and parsley. Adjust seasonings if necessary and cook 10 additional minutes. Serve over grits as a breakfast item or over rice as an entrée.

Long story short, no pics because I just didn't make it aesthetically pleasing enough for me to want to post pics. I'm an FDB pics virgin, so I want my first time to be special, alright? I went with BlackenedOut's suggestion and braised it in salsa verde but ended up with a bit too much liquid at the end. I also forgot both limes AND cilantro for the cilantro lime rice. I improvised by making rice with chicken bouillon, garlic, onion, and jalapeno. It was okay rice. The meat tasted really good, though. I'll post pics next time, assuming I don't repeat my mistakes.

Second the idea of braised pork tacos. I use canned green chili sauce when I'm in a hurry and always turns out good. Better if made the day before so you can skim some of the fat.
