why doesn't bologna taste like bologna any more? Love a good fried bologna sandwich or on fresh bread with swiss cheese. Have tried all brands fresh cut, but still cannot get that ole time flavor..............Any suggestions?

saw an episode of "best thing i ever ate" where a guy listed a fried bologna sandwich as the best thing he ever ate.

Buy a 5 lbs log and throw it on the smoker. Smoked bologna > fried bologna. If you've never had it, you must do it.

Several things could be the problem.

They may have changed the spices - cut back on the amount or pulled some spice that made it cheaper to produce. They may have changed to spice blend to taste more like a competing brand that was selling more than their product.

They may have eliminated some of the "unmentionables" in the product (stomach, kidneys, pancreas, liver) There were times when these things were in higher concentration in sausage type products like bologna. There are definite differences in "All pork" bologna and "all meat" Bologna, "all beef" bologna, etc. They may also have altered the fat content and certainly the Soy Protein content. Everything mentioned can impact their product cost and eventually the profit margin.

They may believe the intended consumer base (Kids vs Adults) (European vs American) might have changed and formulated the product to be more to the taste of a changing consumer base.

To my knowledge, no one really produces the "Teeth, Hair and Eyeballs stuff anymore.

Like someone else said your taste buds and taste preferences have certainly changed as you have aged. Every one goes through this - me, you, all of your friends.
