The only things I wouldn't eat were the raw meats...not because they gross me out, but for safety reason. I don't want parasites.
You should try Jewish deli style tongue. It melts in your mouth.

Sweet breads will make you change your mind very ast re organ products when prepared correctly. It would make you slap yo mama for sure. Sautee them and then pour a pepper boursin infused demi-glace on them.

I don't think I could eat balut ( developing duck embryo that is boiled alive and eaten in the shell). Filipinos love this.
