The best poboy I had was probably the andouille-crusted oyster with bleu cheese slaw and bacon at The Chimes. Actually, that was one of the few things I liked at The Chimes, and they took it off the menu.
That being said, I've never been to any of the "best" poboy places in New Orleans. I've been to Domilise's and thought it was pretty good, but nothing amazing. I also went to Mahony's once, because I had tried their fried chicken liver poboy at the Poboy Festival, but there was no way I was paying that much for a poboy, so I left.
I really need to go to Guy's, R&O, Parasol's, Parkway, and some of the others mentioned.

In New Orleans, I like Parkway and R&O, but
If you ever find yourself in Larose, Monday-Friday for lunch, get a Roast Beef from Harry's. Weird hours, bring cash. Worth the trip.

Grew up on Harry's. Good luck going there and having them open.

Gene's on the corner of Elysian Fields and St Claude always had excellent poboys.
