there are several different ways to make it that will shorten the process. the last one i made took me most of the day but that was mostly letting it cool and gel.

I worked at Jerry Lee's for awhile, it took awhile to make the way they do it.

I switched to Ronnie's a couple of years ago and never looked back. I'm from Lafayette and Ronnie's is the best that I've found East of the Mississippi.

I think I am qualified to ansewer this question having tried both Ronnies and Jerry Lee's Saturday. And 18 differant varities of boudin in the last month.

Ronnies smoked Boudin > Jerry Lee's by a very slight margin.

And for those west of the Atachafalaya..

Ronnie's would place 3rd or 4th in the Acadina area and Jerry Lee's would be one spot behind that.
