Not a roast beef poboy, but I always like the pot roast sandwiches at Zeeland. My go-to's while in college were:
Acadian - served on poboy
Pot Roast and gravy, bacon, cheddar cheese, mayonnaise, lettuce, tomato
Pericles - served on poboy
Pot Roast and gravy, sautéed bell pepper and onion, cheddar and mozzarella cheese

The two best I've found in BR are Capital Crawfish and Jasmines on the Bayou. Chimes is OK. Not a fan of Dempseys or Sammy's or New Orleans Poboy (Coursey) or Pocorellos.
