I don't have any experience with them but I would low and slow would be better.

Or sous vide if you have the capability.

For cross-cuts (aka flanken style), marinate it Korean style for a few hours then throw over a hot grill. The dish is known alternatively as Galbi or Kalbi.

These routinely get marked down at my local grocer. I guess I'm the only one buying them. Oh well..... I've tried a ton of recipes for this particular cut. This is by far the best recipe I've tried.

Fixed it for you. If they aren't on the smoker by now, they won't be ready for dinner. It takes 8-10 hours to smoke short ribs properly. Sear them and braise them for a few hours.

I use them in my rice and gravy. Reduce some chianti in the wilted onions before you put the browned meat back in.
That's what we are eating tonight.

He doesn't have the whole ribs. They are cross cut thin. That's how Sams does them.

OP, you can ask for them whole before the cut them as well. They have to get them out of the back for you. Trim the fat on them good though. They are extremely marbled. Like extremely. You will have to dump the dripping pan a couple times.

That cut needs a slow braise.

Search google for coca cola short ribs and enjoy.
