I’m baking a ham New Year’s Day. What type ham to get? Spiraled? Any good recipes….I'm not a creole mustard fan, so, any without that please. Thanks!

This is what I do. I make these for bereavement meals also.

Spiral Ham Recipe (the ones already cured and spiral cut )

Inject ham.
1 part unsweetened pineapple juice
1 part honey
1/2t cayenne pepper

Smoke or bake at 225 for 3 hours cut side down in a deep foil pan.

Remove from pan. Place on sheet pan or similar.

Wet ham with drippings. Rub outside of ham generously with sugar mixture.

1 cup sugar - 1/2 brown sugar and 1/2 white
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/8 teaspoon paprika
1 dash ground ginger
1 dash ground allspice

Caramelize sugars with torch.

I had one I did with a spiral ham from the store that I liked.

mixed root beer brown sugar and creole mustard with a dab or two of apple cider vinegar. made a glaze on stove stop. cooked it as normal added glaze multiple times during reheating.

everybody loved it

I do it on my Primo, though it is almost as good in the oven.

On the Primo, I put a pre-cooked, spiral-sliced ham over a water pan over a 275-300 fire with hickory or fruit wood chips. After an hour or so, I will losely tent it with foil to help keep it moist. About 30-45 minutes before I take it off, I brush it with Gourmet Warehouse Cherry Jalapeno BBQ sauce. I hit it with the BBQ sauce at least twice, and take the foil off the second time.

I do a pulled ham that everyone loves.

Get a non spiral ham with bone in. Preferred one that says cooked in natural juices instead of water added.

Inject with maple syrup and liquid smoke. put left over liquid in disposable aluminum pan with ham. Put on smoker at 225-250 until temp gets to 160.

Then crank up heat to 325-350 until ham get to 205, let rest then pull out bone and cut up ham.
