Is there anything in the ground meat?

I've seen something similar to that on this board, but the bacon was woven like a basket and I think it was stuffed. Heart attack on a pan!

If it is good, post a recipe. It looks like an Atkins dieter's dream!

Here's the recipe:

2 lb ground beef
1 egg (beaten)
Salt (to taste)
2 tsp hot sauce
2 tsp yellow mustard
1/2 cup bread crumbs
1 tbs steak sauce
8-10 bacon slices (may use turkey bacon)
1/2 cup chopped onions
1/2 cup chopped bell pepper
1 small can mushrooms

Spread bacon on wax paper. In large bowl, mix ground beef, egg, salt, tabasco sauce, mustard, bread crumbs, steak sauce together. Place beef mixture over bacon strips and flatten. Cover mixture with onions, bell pepper and mushrooms. Roll jelly roll fashion and remove wax paper. Place in baking dish and bake at 375F for 1-1/2 hours.

I've done this with italian sausage stuffed with different combinations. The bacon weave is pretty cool and realy easy to do. Never tried it with ground beef, I guess it could work. May one day try it with 50/50 beef and hot sausage.

Sort of like a bacon wrapped meatloaf. I made a meatloaf for a sick friend a few weeks ago. Not my favorite food, but this one was so darn good that I may become a fan. It had sour cream in it and I think that somehow made it very moist. There wasn't another ingredient that would have. No tomatoes was also a plus. Made a brown gravy/sauce from the drippings. I bet your drippings would make a good sauce.

Hell, this inspired me. I'm going to make some stuffed jalapenos tonight.

I'd like to see the end product, post pics if you can!

Sorry, too late!! Didn't see this post in time. It was pretty good. I think it cooked too long. I'll shorten the cook time next time. And sour cream might be something to add to the meat. I'll try that next time too.

Make a bacon weave next time. It'll completely cover the roll and add tons of flavor.
