I saw a jar of clarified butter at Trader joes and thought, "next someone will be selling bacon grease"

Piggly Wiggly sells a box of bacon end pieces. I use it to season my 20qt cast iron Dutch oven. So much grease, you could lube up a fat girl and all her friends

Well, as I said, I don't use it often. I think my little dish has been in the fridge exceeding a year, so my question does make sense, but thank you for your interest and your response.

The reason our grandmothers sat on the stove and nothing happened is because they used it all the time and kept adding to it. The stock kept rotating. If you don't use it frequently it will go rancid unless you refrigerate which I do in a Mason jar.

I keep mine in a jelly jar in the cabinet above the stove. Every time I cook bacon, let it cool, pour in the jar and put back. Easy to take a spoonful out and in the pan whenever needed.

These are great for cooking peas, beans and greens. If you plan to use the pieces for seasoning vegetables, the best thing to do is to lay the individual pieces out on a cookie sheet and stick in the freezer. Once they're frozen, put them in a freezer bag, then you can pull out the amount you need and not have to tear them apart.
