Anybody ever ate some? I had a friend who owns an Exotic Animal Farm give me some. I cooked it in a Sauce Piquant for the Bama game and told everyone it was Elephant.

Its a much softer meat than Whitetail, maybe a higher fat content and very damn good. Would love to try a Steak next time.......

I shot a big SOB in Texas this year. Awesome table fare. Pot roast is outstanding. Very tender. I'll roast a whole backstrap soon. I will not let one walk without a shot ever again.

I have some axis backstraps thawing now and a nice roast to do on sunday. I find it much less gamey than whitetail deer. Excellent taste. This cold front that came through will be perfect for lighting up some natural mesquite chunk charcoal and cooking the backstraps a nice med rare.
