Augusta National Pimento Cheese

I’m honor of the Masters, how about pimento cheese sandwiches? I think I’ll make it this weekend. For what it’s worth, I think Calvin’s in BR has an amazing pimento cheese.


Augusta National-style Pimento Cheese

Ingredients:

3 cups shredded white cheddar cheese
2 cups shredded yellow sharp cheddar cheese
4 oz crumbled blue cheese
1 cup shredded Parmesan cheese
1 (4-oz) jar sliced pimentos, drained
1 cup light mayo
2 tbs Dijon mustard
1 loaf of white bread

Method:

Combine cheeses, pimentos, mayo and mustard in a food processor and process until smooth. Cover and chill. Spread on bread slices. Makes four sandwiches.

It's a good pimento cheese sandwich. I rank the egg salad slightly higher.

That's 6.5 cups of cheese + 1/2 cup pimentos +1 cup of mayo and it says it makes 4 sandwiches, yet the sandwich looks like this:



Maybe I'm overthinking it, but that sandwich doesn't look like it has over 1.5 cups of cheese and 3/4 cup of other ingredients.

I made it for dinner tonight along with egg salad. 2 cups cheddar 1 cup mont jack 1/2 cup Mayo. 4 Oz cream cheese. Little bit of onion and garlic powder, s&p. 4 Oz chopped pimentos folded in

The wife makes her recipe for us. Her secret is to use only block extra sharp cheddar. Some in the fridge right now. Can't remember when we had a loaf of white break in the house. A lot of the time, we just eat her pimento cheese on Captain's Wafers.

Her egg salad is first level good also. If we eat either on bread, it is always wheat bread.

Butter grilled pimento cheese is a great sandwich. Even better with a coffee cup of cream of tomato soup.

And speaking of salad sandwiches, I love a good ham salad.

I like pimento cheese and order it in LA restaurants but I have never made it. Seems easy but I would be sad if it wasn't as good as a restaurant.

it's not rocket science.
boil egg. peel egg. cut up egg. add mayo. add salt and pepper. put on toast. If it's too dry, add more mayo next time. If it's too much mayo, then don't put so much mayo. And don't use fat free cheap shite mayo.


I love egg salad. I eat it almost every day.

I made deviled eggs the other day and while I was hoovering them my wife put two deviled eggs in a slice of white bread and folded it over and handed it to me

Or I could use a tried and true recipe and not try to reinvent the wheel.

Not a whole lot, but a half tablespoon or so of yellow mustard in it. Pickles, no. But I do put in some finely chopped celery

I like pimento cheese. Egg salad is ok, as is ham salad, but turkey salad is the best. Leftover turkey, mayo, celery, pickles.

The egg salad at Augusta National is bland af. Pimento cheese is much better. But to be honest, I like my own pimento cheese better.

Yes on a little mustard. Pass on the pickles but I would eat it.

Olives worth a try if you like olives.
