Anyone smoke on a gas grill?

My new built in came with a wood chip smoker box. Has anyone had any luck smoking a Boston butt on a gas grill??? Recipes would be appreciated.

Honestly it produces greater results Than traditional pellet or charcoal smokers. Most people won't do the research on how to do it right....it takes a few times of trial and error but if you stick with it you'll be doing 50 to 75 hour long smokes with no problem....just make sure you have plenty of propane.

I've had a 200 gallon propane tank burried under the slab at our house for this reason. It's more common in places like Virginia, and North Carolina, where people don't have acces to natural gas mains. But for long smokes on a gas grill, it's a great set up down here in the south. Charcoal, wood, and even pellets are a mess. Gas produces some of the best smoke rings, and is one of the cleanest burning fuels available.

I have the gas line run to my grill underground so doing a 2 or 3 day smoke is no problemo and the coyote 36 inch stainless makes a long smoke as easy as pie.
I do feel for folks up north with access to gas mains.

Here's a Boston butt I did last weekend at 220° for 56 hours:

Looks like you ran the vents wide open on the firebox?

Three quarters of the way for 46 hours, wide open at the end for a nice char to lock in moisture. The results speak for themselves.

When all I had was a smaller gas grill I purchased a V-shaped smoker that sits in between the gas grates. I'd turn on the heat just on the side with the wood chips, wait for smoke, then load up the indirect side with chicken wings. Very convenient and I loved the way they turned out.

Those things work great. Ever try any bigger pieces? Long smokes?

Not really. It was a modest gas grill because I was temporarily in an apartment complex that would not allow charcoal grills on the porches/patios, nor did I want to take any chances with the flames. Since it wasn't very big, it was perfect for either chicken wings as mentioned above, or simply grilling. It wouldn't have housed anything large for a long cook. It really did do the trick though and gave wings a nice smokey flavor.

Smoking on a gas grill in an apartment complex is one of those things that's frowned upon, but not impossible. Like kissing your cousin, IMO.

In college we had an apartment maintenance guy that was a real hard case about us using our gas grill as a smoker on the balcony. Wrote us up and threatened to have us kicked out if he caught us again...we ended up moving the operation inside and using some industrial exhaust fans to handle the smoke.

You bring up a great point. While not essential, highly recommended. For people unable to run a commercial exhaust, especially inside an apartment complex, a series of Hunter oscillating fans will get the job done.
You just have to make sure the bearing stays greased in the rotator mechanism, or you'll lose that 180° of oscillation, which as you know, is key for a 72 hour smoke job. I recommend this model:

When we moved shop inside we were pretty much limited to 8 or 10 hour smokes max which wasn't ideal but we made do.
There was a faint hint of the smoke smell lingering in the drywall..the ceilings....bathrooms and in the furniture apholstry and most of our clothes but we would just leave the windows open with fans on for a couple of weeks after the smoke and it got rid of most of it

They make the 180° oscillating Hunter with blue tooth compatibility and an app, but I haven't seen any locally. eBay had a few the other day, as did Amazon, but they fly off the shelves.

I'll be in San Antonio next week and will check a couple of spots there. I've good luck in that city finding hunters.

Has anyone had any luck smoking a Boston butt on a gas grill???
As good as I've had.

No question. You put the time in, the results speak for themselves.
