My DCS has a smoker box and I've never explored it.

That's like asking if you can boil battered chicken to fry it. Why don't you just smoke it instead of using gas? Buy a cheap smoker if you don't have one, like an Old Smokey. You will burn the shite out of anything you try to smoke on a gas grill and dry it out completely.
