I have very limited experience with Ethiopian cuisine but love trying new ethnic foods. I picked up a container of berbere seasoning from Whole Foods yesterday which is an essential part of Ethiopian food.

I ended up making a cabbage soup of sorts. Browned a large chopped onion, two large sliced carrots, a small yellow bell pepper, and four cloves of garlic. Added a tablespoon of berbere, can of diced tomatoes and about half a can of crushed along with two cups of stock made with chicken better than boullion. Added a head of chopped cabbage and cooked covered on low for about an hour. Probably the best cabbage I have ever had.

Anyone have any suggestions on other ways to use the berbere seasoning? Any good Ethiopian recipes? Thanks.

I like berbere in soupy/stewy things...like a lentil stew, or a stewed chicken dish. Depending on who's doing the blending, it can be mostly hot, or have lots of other flavors in it as well.

Ethiopian dishes have a lot of Italian influence.
