After the boil is when most people decide to start getting creative. To make crawfish chowder, all you need is onions, celery, bell pepper, garlic, bay leaf, crushed
red pepper, dried oregano, a few shots of Worcestershire sauce, crystal hot sauce, some half-and-half some, whole milk, cayenne pepper, white pepper, sausage, mushrooms, corn, and a new potato or two.
Peel and devein the tails,
Chop a red bell Pepper and place it in the pot with few tablespoons of butter, sliced shrooms, onions, garlic, corn, diced new potato, and your dry spices.
Dice and brown some of the sausage, then add it to the pot,
Let that marry for a few minutes,
At this point, you can bring it close to a simmer and reduce the heat, or just let warm for guests/to serve,
