After 22oz of oil, 2 whole lemons, and 11 eggs

I finally didn't break the emulsion and made mayonnaise.
The last recipe that worked was 4 egg yolks, 1 tbs lemon juice, 1 tbs water, 1 tsp dijon, and 3/4 cup of oil.
Salt and pepper to taste. Used most of it in Chicken salad, so I'll see how good it tastes tomorrow. Letting it meld over night to keep Martha happy.

11 Eggs, congrats , but couldn't you have got a jar of Dukes at Walmart for like the same price as a dozen eggs?

I've heard it lasts anywhere from 4 days to a little over a week.
I wouldn't mess with raw egg, but you probably used pastureized eggs so it's most likely not gonna kill you.

Eggs cost $2 and some change. Store bought mayo costs more than that.
If you've never made your own mayo, you have no idea what you're missing. It's exponentially better than any store bought.

And it's heavy duty and won't break in salads
